Production Notes: After hand-harvesting, the clusters were de-stemmed and crushed, followed by a three day cold soak. Submerged cap fermentation was conducted in open top stainless steel vessels, at 5 brix the wine was pressed directly into barrel for completion of primary fermentation and malolactic fermentation. Remained in new oak for 6 months before transferring to one use and older barrels for remainder of aging.
Description: Done in the traditional Barolo style, this Nebbiolo has aromas of cherry, vanilla, plum, tobacco, and rose petals, which mingle with rich, deep flavors of cherry, raspberries, tea, leather, minerals, and velvety smooth tannins. The flavors hang on your palate for what seems a delightful eternity.
