Production Notes: Whole cluster pressed into 80% neutral French Oak, 10% 3rd use French oak, and 10% stainless for fermentation and aging. Aged for 9 months before bottling, and stirred weekly on the lees. Partial wild yeast fermentation. Less than .5% residual sugar. 14.6% alcohol at bottling.
Harvest Information: Cropped to less than 2.5 tons per acre. Hand picked.
