Production Notes: Whole cluster pressed into neutral French oak barrels (80%), and stainless barrels (20%) for fermentation. 6 months barrel/tank aging, stirred weekly on the lees. No residual sugar. 13.9% alcohol at bottling.
Harvest Information: Cropped to less than 2 tons per acre. Hand picked.
Description: Wonderful aromas of peach, crushed flowers, minerals, and fir needles. Decadently complex flavors of ripe peach, lemon, lime, star fruit, a hint of caramel, nice minerality, and a refreshing bit of tartness. The perfect wine pairing for spicy foods.
