Production Notes: Whole cluster pressed into neutral French oak barrels (80%), and stainless barrels (20%) for fermentation. 6 months barrel/tank aging, stirred weekly on the lees. No residual sugar. 14.3% alcohol at bottling.
Harvest Information: Cropped to less than 2 tons per acre. Hand picked.
Description: Wonderful aromas of honeydew melon, peach, vanilla, wet stone, and jasmine. The first flavor impressions are of bright tart lemon and star fruit which quickly mellow and transform into a rich finish with a hint of coffee cake and mandarin orange. The perfect wine pairing for spicy foods.
