Production Notes: After hand-harvesting, the clusters were de-stemmed and crushed, followed by a three day cold soak. Submerged cap fermentation was conducted in open top stainless steel vessels, at 7 brix the wine was pressed directly into barrel for completion of primary fermentation and malolactic fermentation. Remained in new oak for 6 months before transferring to one use and older barrels for remainder of aging.
