Production Notes: Whole cluster pressed into neutral French oak barrels for fermentation. 9 months barrel aging, stirred weekly on the lees. No residual sugar. 14.5% alcohol at bottling.
Harvest Information: Cropped to less than 2 tons per acre. Hand picked.
Description: Complex aromas of apple, citrus, honeysuckle, and herbs intermingle with flavors of pear, apple, lime, beeswax, and minerals. The finish lingers for quite some time.
